What I love so much about this winter savory chili is how many vegetables you can add into this recipe and make it so healthy.
Unfortunately, winter tends to be the time of year where colds, and viruses are more prevalent. So, in addition to stocking up on vitamins this time of year, frequent meals that are power packed with vegetables is a necessity too.
ONE POT MEAL
While expecting my 5th child I gifted myself the Instant Pot as a way to help simplify dinner.
Yes, I am riding the Instant Pot train because it’s actually a kitchen appliance I use quite frequently.
And it’s a purchase I don’t regret buying at all.
With this savory winter chili I was able to toss all the ingredients in my instant pot without having to think too much about it.
You could very well make this chili in a large or smaller standard pot to cook on your stovetop and get the same results as well.
BUDGET FRIENDLY MEAL
Remember, I’m a busy mom who’s goal is to feed my family healthy nutritious meals that are easy on our budget.
Many of these ingredients you may already have on hand.
For everything else, all of the ingredients I purchased (with the exception of the ground beef) were less than $2.00 and many were less than $1.00!
As much as possible I prefer to purchase organic grass-fed beef which is more pricey, but the health benefits justify the extra cost.
1/2 medium chopped onion
2 bay leaves
1 teaspoon ground cumin
2 tablespoons dried oregano
1 tablespoon salt
2 stalks chopped celery
2 chopped green bell peppers
3 cloves chopped garlic (I was out of garlic cloves so I used garlic powder instead)
2-3 chopped green chile peppers or canned
1 package of ground beef or turkey
3 (24oz) can crushed tomatoes
1/4 cup chili powder
1 tablespoon black pepper
For all the canned beans listed below make sure they are all drained before adding to chili.
1 can kidney beans
1 can garbanzo beans
1 can black beans
1 can whole kernel corn
BROWN THE MEAT
- Preheat skillet
- Add a few drops of oil to pan to keep meat from sticking to the pan
- Brown the meat on medium while adding salt and pepper to the meat
4. Pour all other ingredients into either an Instant Pot or a large soup pot
5. Add the cooked ground beef into the pot and cook on low for at least 45 minutes
This savory winter chili is a great dish for leftovers that can be enjoyed later.
The easiest way to freeze leftover chili is to separate into portion sizes. Then reheat when ready to eat.
