Don’t get me wrong, you can totally make a delicious chicken salad with chicken from the can. But, there’s no comparison when it comes to making homemade chicken from scratch.
I much rather prefer to whip up homemade meals as much as possible.
The thought of making delicious homemade chicken salad may sound very time consuming. But, it’s actually one of the homemade meals I really enjoy making.
Once it’s made I know I can store it in a tight lid container and use this for snacks, lunches or dinner.
As we get closer to warmer weather and you want to spend more time outdoors or less time in the kitchen this yummy homemade chicken salad is a great option.

TIPS FOR MAKING HOMEMADE CHICKEN SALAD
The base of the entire recipe starts with the chicken.
There are 3 tips I want to share for helping this chicken salad recipe be a hit amongst your family.
USE ORGANIC CHICKEN
There is a noticeably difference in taste when it comes to organic vs. non-organic chicken in my opinion. Many believe that organic chicken taste better because their feed is highly regulated.
Our Fathers Farm tells about the benefits of organic chicken. Once you can bypass the increase in cost the benefits and taste will cause you to become a fan.
USE THE INSTANT POT
I gifted myself with an Instant Pot when I was pregnant with my 4th child.
It was a way to get the results of the traditional slow cooker, but much faster. This is one purchase I don’t regret making.
I really enjoy cooking my whole chickens in the instant pot because they come out tender and delicious every time.
Since this recipe is centered around the chicken itself, having your chicken tender and well seasoned is the best way to get started.
When using my instant pot, I like to use the pressure cook feature on high for about 1 1/2 hrs. Depending on the size of the chicken I may cook it for another 30 mins. or so.
SEASON MEAT THE NIGHT BEFORE
The flavor of well marinated chicken is a bit bolder than seasoning it the day of.
I don’t always remember to season the night before, but when I do it’s always worth the extra preparation.
INGREDIENTS YOU WILL NEED:
1 whole chicken (organic preferred)
1 cup of mayonnaise (more if you prefer thinner chicken salad or less if you prefer thicker chicken salad)
1/2 cup of Greek style feta dressing
1/4 cup of sweet relish
1 small onion
2 tablespoons lemon pepper
2 tablespoons garlic powder
2 tablespoons season all
2 tablespoons smokehouse maple seasoning
1 tablespoon pepper
1 tablespoon salt
(when it comes to seasoning you can add any of your favorite poultry seasonings)
TOOLS YOU MAY NEED:
shallow glass pan
HOW TO MAKE EASY CLASSIC CHICKEN SALAD
- Place clean chicken into a shallow glass pan
- Mix all the dry seasonings into a small glass bowl
- Sprinkle the dry season mix over the entire chicken. Including the inside.
- Slice onion into thin slices
- Place seasoned chicken in the Instant Pot. Add onions on top and around the sides of the chicken.
- Cook on high pressure for about 1 1/2 hrs. ( cook more or less depending on the size of your chicken )
- Once done, place chicken in a large bowl. I like to remove the onions as I only use them to add extra flavor to the chicken.
- While chicken is still warm shred into small pieces. Place shredded chicken into the large bowl.
- Add mayonnaise, Greek feta dressing, and relish
- Mix well then chill before serving
